How to prepare Canarian Truchas de Batata?
This is one of the star Christmas sweets of the archipelago’s gastronomy. Canarian truchas de batata can be made at any time of the year and is ideal for desserts. Its elaboration is very simple since it is very similar to the salted empanadillas.
Preparation
90 – 120 minutes
Ingredientes for 4 people:
- ½ of flour.
- 1 kilo of yellow sweet potato.
- ¾ of sugar.
- 100 gr of peeled almonds.
- Grated lemon rind.
- 3 tablespoons of puff pastry margarine.
- Olive oi
- Salt
- Large empanadillas wafers.
- A spoonful of powdered cinnamon.
Preparation
To make this recipe we just need to follow a series of steps:
- Make the dough with flour, water, margarine, a spoonful of olive oil and a little salt.
- Knead slowly avoiding the formation of lumps. When the dough is finished, let it rest for about 30 minutes.
- When the dough has rested, cook the sweet potatoes. We have to leave them at a point where they are soft and do not get to brown completely. Crush them until a homogeneous dough is formed.
- Mix the sweet potatoes with the almonds, sugar, lemon zest and ground cinnamon.
- Sprinkle the flour on the table, stretch the dough with a roller and form circles of 8 centimetres to obtain good trout of Canary Island sweet potato.
- To make them look good we should not put too much filling in the wafers because this way we will get that when frying them open and spoil us.
- Fry with very hot oil.
- Remove on absorbent paper to remove excess oil.
