How to prepare Carajacas?
Carajacas is a typical dish in the Canarian gastronomy. Grilled or fried veal liver fillets, served with a green mojo sauce and usually accompanied by papas arrugadas.

Ingredientes:
- 1 kg. of pork or veal liver
- ½ hot pepper
- 6 cloves of garlic
- ½ glass of oil
- ½ glass of vinegar
- Paprika
- Orégano
- Parsley
- Salt
Preparation
- Mix the hot pepper, garlic cloves, vinegar and paprika in a mortar or shredder to obtain a paste.
- Add the oil and mix everything.
- Add the paste to the liver fillets and let them marinate for about 10 minutes.
- Fry the steaks quickly back and forth in a non-sticky pan with just oil.
- Served with papas arrugadas and the paste that has been cooked in the frying pan with the fillets.
