How to make Canarian Garbanzada?
Canarian Garbanzada is one of the typical dishes of the archipelago’s gastronomy. It is usually served as an enyesque (appetiser) before the main dishes.
Ingredients
- Chickpeas (500 g)
- Potatoes (500 g)
- Salted ribs (200 g)
- 2 Pig’s trotters
- Chorizo (100 g)
- 1 Pepper
- 1 Onion
- Paprika
- Bay leaves
- Black pepper (2 grains)
- Garlic
Preparation
The preparation of the Canarian Garbanzada is very simple. Just follow these steps:
- The night before, put the chickpeas with water in a bowl and the ribs with water in another bowl.
- Put the chickpeas, ribs and pork in a cauldron with water.
- Let it simmer.
- Add the bacon and chorizo with the first boil.
- At the same time make a sauté in a frying pan with a pepper, an onion and three cloves of garlic, all finely chopped.
- Put the sauté in the cauldron with the chickpeas and stir well.
- Add a couple of bay leaves, half a spoonful of paprika and a the black pepper.
- Peel the potatoes, cut them into cubes and fry until golden brown.
- Put them in the stew so that they get the optimum point together with the other ingredients.
