How to prepare Gofio Escaldado?
One of the most traditional dishes is the Gofio Escaldado (corn flour with fish broth), also known as Escaldón de Gofio, depending on the island. It has a simple elaboration, but it is certainly one of the most delicious starters that exists.
Preparation time:

Ingredients for 4 persons:
- 1 liter of good fish broth
- 2 cloves of garlic
- A branch of mint
- 1 onion
- 500 g of gofio
Preparation
- Put all the gofio in a bowl and make a small hole in the middle to add the hot broth little by little.
- Beat while incorporating the fish broth gradually until you get a soft, light and delicious dough.
- Chop and add the mint to the mixture.
- Cut the garlic as you like.
- Part it in a frying pan wait until it’s gilded
- Add the garlic to the Gofio.
- Cut the onion into large pieces and place it around the bowl in which the Gofio Escaldado will be served.
