How to prepare Puchero Canario?
The Puchero Canario is an ancestral recipe that perfectly defines the traditional cuisine of the archipelago’s gastronomy, which tries to take advantage of food rests.

- Add the chickpeas, which have been soaking over night, the beef and the ribs in a large pot. And fill the whole pot with water just leaving 2 fingers at the top. Add Salt and cook it for about 30 minutes.
- Now its time for the chicken and the corncobs, which have previously been cut into 4 pieces. Add it to the pot and cook it for another 20 minutes.
- Add the beans and carrots, cut into pieces, but not too small and cook it for 5 minutes.
- Add the peeled potatoes, previously broken, not cut. You can do this by cutting the middle of the potato and breaking it up afterwards.
- Like this you will get a more compact broth. Do the same with the sweet potato and cook for another 5 minutes.
- Finally add the zucchini and pumpkin, cut into pieces, but also not too small and cook it for 20 minutes.
- Make sure that everything is cooked well and strain the broth to serve the vegetables and the meat separately.
- Use the olive oil and vinegar to dress the dishes and create a delicious finish.
