How to prepare Canarian Pata Asada?
Canarian Pata Asada is a popular recipe from the traditional Canarian gastronomy, prepared for most family dinners or celebrations. On the Canary Islands it is common to buy the roasted pork leg to prepare food for a big group of peolpe.
It not only offers delicious steaks, but is also used to prepare some sandwiches, sautés, sauces… and a huge variety of recipes to take advantage of the roasted pork.
People usually order the full leg and prepare it on a grill, but with this version you can also prepare it in your house to get the same result.

- We start with making some superficial cuts on the skin of the pork leg in order to get a crispy finishing.
- Prepare a mixture with a pair of garlic, pepper, rosemary and salt to get a paste.
- Cover the pork leg with this paste.
- Preheat the oven to about 250 degree and calculate one hour per kilo of meat for its preparation.
- We prepare a brine with water, salt, garlic and rosemary. If you have a dispenser in form of a spray even better.
- Put the pork leg into the oven and lowered the graduation to 200 degrees.
- Spray the pork with the brine every 20 minutes to get a juicy and crispy result
- Take it out of the oven and let it cool down for about an hour.
