How to prepare the traditional Tollos Canarios?
The Tollos Canarios are a traditional recipe in the Canarian cuisine, which is based on desalinized dogfish dried in the sun, served with vegetables and stew.
It is part of the incredible variety of fish recipes and the versatility offered by the Canaries. Perfect for those who would like to enjoy a dry aperitif on a beach day with a refreshing drink.

Ingredients:
- 1kg of desalinized dogfish, soaked for 24 hours in cold water
- 600 g tomatoes
- 300 g onions
- Garlic Head
- Thyme
- Cumin
- 1 Laurel Leaf
- Olive oil sweet paprika vinegar
- White wine
- Salt
- Pepper
Preparation
- Desalt the dogfish preserving it in fresh water for 24 hours.
- Dry it well the next day and it cut into small pieces.
- Cook it in water for 10 minutes and get them to soften and put them aside.
- Take a cauldron and pour a good jet of oil to fry the onion, the pepper, thyme and the laurel leaf.
- When all the vegetables are ready, add the paprika, the totally seeded and peeled tomatoes and add a good stream of wine.
- Let it cook all together until all ingredients of the the sauce are well done.
- Add the dogfish and add water untill it is covered completely.
- Add a spoonful of vinegar and salt and let it cook for 20 minutes.
