These are the basis for the development of a lot of Canarian recipes.
Our archipelago has several exclusive varieties of onions.
Those from Tenerife include: Guayonge, Carrizales, Masca or those from San Juan de la Rambla, for their mild and sweet flavour.
Onions from Lanzarote are also excellent. They are grown in “jable” (volcanic sand of the organogenic type resulting from the fragmentation of marine mollusk shells).
Formerly, in the Canary Islands, particularly in Tenerife, onion seeds were planted and subsequently cultivated in Europe.
