What is Canarian potato soup?

This is a traditional Canarian recipe based on using low-cost foods. The use of potatoes , green mojo, eggs and various vegetables grown in the Archipelago have given this recipe the distinction of being a “must-have” in Canarian kitchens.

  • A couple of cloves of garlic
  • 2 Tomatoes for frying
  • Sweet paprika
  • Cumin Powder
  • Saffron
  • Parsley
  • Cilantro
  • 1 Egg per person
  • 1/2 red pepper
  • 2 Potatoes per person

How to prepare Canarian Potato Soup

A simple dish to prepare that is based on creating a good base from:

  1. Roughly chop the garlic cloves, tomatoes and spices.
  2. Stir-fry to extract the flavor of the vegetables and spices.
  3. Once this is done, we add a good amount of water and salt .
  4. Once it has started to boil, we peel and break up the potatoes so that they release the starch and give body to the broth.
  5. It is accompanied with a few touches of a delicious and intense green mojo.
