  • 1 kg of clean goat meat
  • 1 glass of olive oil
  • ½ head of garlic
  • 2 Onions
  • 2 Tomatoes
  • 2 carrots
  • 1 Pepper
  • 1 glass of dry white wine
  • 3 strands of saffron
  • 3 bay leaves

How to prepare Canarian Goat Meat

  1. The first thing we need to do is cook the goat meat. We recommend asking our butcher to clean it properly. Put water, a splash of oil , salt and an onion cut in two halves in a pot. Add bay leaves and thyme, which are the most commonly used options for cooking goat meat.
  2. When it is tender, which will depend on its quality and freshness, we remove it and set it aside.
  3. In a saucepan, cut and chop the garlic, peppers, tomatoes, onion, carrot and parsley and sauté until you get a sauce, to which you will add the wine to add aroma to the stew.
  4. When the sauce is almost ready, we add the goat meat and let both preparations mix, giving the sauce body thanks to the meat and making it more tender at the same time.
