What is cod with onions?

Continuing with the fish recipes, we present a recipe that is not originally from the islands, but its adaptation to our Archipelago is just as delicious as the one we can find in other regions of the Spanish territory.

Ingredients for 4 people

  • 1 kg of salted cod loin
  • 4 Onions
  • 1 red pepper
  • Vinegar
  • Oregano
  • Flour
  • Half a kilo of ripe tomatoes
  • A head of garlic
  • Laurel

How to prepare Cod with onions

  1. We desalt the fish by washing it and leaving it to soak in cold water from the day before, changing the water 3 times and once ready, we put it in a colander.
  2. To prepare the onion sauce, cut the onion into julienne strips and sauté in a frying pan over medium heat until browned.
  3. Similarly, we chop the pepper into julienne strips and add it to the onion.
  4. We chop the garlic cloves and add them to the stir-fry.
  5. We peel the tomatoes and chop them to later add them to our stir-fry to make a sauce.
  6. We add a splash of vinegar and stir our sauce for 5 minutes.
  7. Add about 400ml of water and a little oregano and let the sauce simmer over low heat for 10 minutes to lighten the sauce.
  8. We take the pieces of cod and lightly flour them.
  9. Fry the cod pieces in a frying pan with oil over medium-high heat and remove them onto absorbent paper.
  10. We carefully place the cod in our onion sauce and leave it on low heat in the pot for 15 minutes.
  11. We turn the cod over and repeat the same procedure.
  12. We turn off the heat and let it rest for 10 minutes.
