- Put water in a pot to boil.
- Once it has boiled, turn off the heat and add the almonds for 5 minutes. This will help us peel them easily.
- We drain the almonds, peel them and place them on absorbent paper.

- Now we add the almonds to our syrup and stir to prevent them from sticking, stirring constantly until our mixture begins to thicken.
- We remove it and let it cool.
- Once cooled, beat vigorously and add the egg yolks.
- We put the mixture on low heat and stir to avoid lumps and to achieve a velvety and pleasant texture.
- We let it cool in a tightly closed glass bowl so that it does not take on flavors.
