Bienmesabe

What is Bienmesabe?

One of the most acclaimed Canarian desserts is bienmesabe, in which the main ingredient is almonds. It is used as an accompaniment to flan and is typically accompanied by vanilla ice cream, chocolate or nougat.

Ingredients

  • Peel of half a lemon
  • 250 g Almonds
  • 125 g Sugar
  • 2 egg yolks
  • 1 cinnamon stick
  • 125 ml Water

How to prepare Bienmesabe

  1. Put water in a pot to boil.
  2. Once it has boiled, turn off the heat and add the almonds for 5 minutes. This will help us peel them easily.
  3. We drain the almonds, peel them and place them on absorbent paper.
  4. Once drained, we crush them and toast them in a pan until they have a golden colour. CAUTION! Be careful not to burn them, because they are very bitter.
  5. In another pot, bring the 125 ml of water to a boil, with the sugar, lemon peel and cinnamon, over medium heat to obtain a delicious and balanced syrup.
  6. Once our syrup is ready, we remove the lemon peel and the cinnamon stick.
  7. Now we add the almonds to our syrup and stir to prevent them from sticking, stirring constantly until our mixture begins to thicken.
  8. We remove it and let it cool.
  9. Once cooled, beat vigorously and add the egg yolks.
  10. We put the mixture on low heat and stir to avoid lumps and to achieve a velvety and pleasant texture.
  11. We let it cool in a tightly closed glass bowl so that it does not take on flavors.
