Canarian Garbanzada

What is a Canarian garbanzada ?

Canarian style garbanzada is one of the typical dishes of island cuisine. It is usually eaten as an enyesque (appetizer) before main dishes.

Ingredients for 4 people

  • 500 g of chickpeas
  • 500 g of Potatoes (optional)
  • 200 g of salted ribs
  • 2 pig trotters 200 g of bacon
  • 100 g of Chorizo
  • 1 Pepper
  • 1 large onion
  • Paprika Bay Leaf
  • 2 grains of black pepper

How to prepare Canarian Garbanzada

Preparing Canarian chickpea stew is very simple. You just have to follow the steps below.

  1. Place the chickpeas and ribs in separate containers with water overnight.
  2. Place the chickpeas, ribs and pork in a pot with water.
  3. Let it simmer.
  4. At first boil, add the bacon and chorizo.
  5. At the same time, make a stir-fry in a pan with a pepper, an onion and three cloves of garlic, all finely chopped.
  6. Pour the sofrito into the pot with the chickpeas and stir well.
  7. Add a couple of bay leaves, half a tablespoon of paprika and a couple of black peppercorns.
  8. Peel the potatoes, cut them into cubes and fry them until golden.
  9. Put them in the stew so that they reach the optimal point together with the other ingredients.
