What is Canarian roasted leg?

Roasted pork leg is a traditional Canarian recipe that is present in most family dinners or celebrations on the islands. It is common to buy a roasted pork leg when the family gathering becomes large. It is used in various ways, to make sandwiches, stir-fries, steaks, etc. There is a wide variety of recipes that can be used to make the most of this pork leg dish. It is usually ordered and roasted on rotisseries, but below we propose a recipe that you can make in your home oven and achieve a very tasty finish.

Ingredients

  • A 2kg or 1.5kg piece of pork leg
  • Rosemary
  • Salt
  • 4 Garlics
  • Black pepper
  • Olive oil

How to prepare Canarian roasted leg

  1. We start by making some superficial cuts in the skin of the pig’s leg to make it crispy.
  2. We prepare a paste with a couple of garlic cloves, pepper to taste, rosemary and salt until we obtain a paste.
  3. We massage the pig’s foot with the prepared paste.
  4. We preheat the oven to about 250º and calculate the preparation time at one hour for each kilo of meat.
  5. We prepare a brine with water, salt, garlic and rosemary and, if possible, use a spray dispenser .
  6. We put the leg in the oven and lower the temperature to 200 degrees.
  7. Every 20 minutes we sprinkle our leg with brine to achieve a juicy and crispy result.
  8. We take it out of the oven and let it rest for approximately one hour.
