Canarian Ropa Vieja

What is ropa vieja?

Ropa Vieja is one of the most famous typical dishes of the Canary Islands and is a product of “aprovechamiento” cooking, where different leftover ingredients from other dishes such as puchero are used. They are mixed with a delicious homemade tomato sauce and some excellent French fries cut into cubes.

  • 1 kg of chickpeas
  • 8 Tomatoes
  • 2 Onions
  • 1 Peppers
  • 4 Potatoes
  • White wine
  • 600 g of beef
  • 600 g shredded chicken

How to prepare ropa vieja?

  1. We are going to start by shredding the meats that have previously been cooked over low heat together with the chickpeas.
  2. It should be noted that this recipe is normally made in the days after cooking the famous Canarian stew.
  3. We shred both the beef and the chicken and set aside with the chickpeas.

How to make tomato sauce?

  1. We chop our tomatoes, onions and peppers and fry them with a splash of white wine until we obtain a homemade tomato sauce that we will then blend in a food mill or with our food processor.
  2. Our recommendation will always be the food mill to achieve a handcrafted finish.
  3. We balance the salt and add a pinch of sugar to eliminate the acidity of the tomato.
  4. We reserve our tomato sauce along with the shredded meat.
  5. Peel the potatoes and cut them into cubes. To get crispy fries, soak them in salt for 10 minutes before frying them to release excess starch.
  6. After the time has passed, we strain, dry and put the diced potatoes in a frying pan with plenty of hot oil to obtain crispy and silky fries.
  7. We drain and remove the excess oil with absorbent paper.
