What are Canarian sweet potato trout?

In Canarian cuisine, we are faced with one of the most popular Christmas sweets in the Canary Islands. Canarian sweet potato truchas can be made at any time of the year and are ideal for desserts. They are very easy to make as they are very similar to savoury empanadillas and will not take up much time in the kitchen.

Ingredients for 4 people

  • ½ cup flour.
  • 1 kilo of yellow sweet potato.
  • ¾ sugar.
  • 100 gr of peeled almonds.
  • Lemon zest.
  • 3 tablespoons margarine for puff pastry.
  • Olive oil
  • Salt.
  • Large empanada wafers.
  • A tablespoon of cinnamon powder.

How to prepare Canarian Sweet Potato Truchas

  1. We will make the dough with the flour, water, margarine, a tablespoon of olive oil and a little salt. Knead slowly, avoiding lumps. When we have the finished dough, we will let it rest for about 30 minutes.
  2. Once the dough has rested, we will cook the sweet potatoes. We have to leave them at a point where they are soft and do not get completely brown. We will mash them until we get a homogeneous dough.
  3. We will mix the sweet potatoes with the almonds, sugar, lemon zest and ground cinnamon.
  4. Sprinkle flour on the table, roll out the dough with a rolling pin and form 8-centimetre circles to make some nice Canarian sweet potato trouts.
  5. To make sure they turn out well, we should not put too much filling in the wafers because this will cause them to split open and get ruined when we fry them.
  6. Fry with very hot oil.
  7. We remove it on absorbent paper to eliminate excess oil.
