  • 2 kg of rabbit
  • Rosemary
  • Thyme
  • Oil
  • Vinegar
  • Laurel
  • Salt
  • A head of garlic
  • A pinch of paprika
  • 1 hot pepper

How to prepare rabbit in salmorejo

  1. We cut the rabbit into medium pieces and set it aside in a container with salt.
  2. We prepare a paste with the garlic cloves and a handful of coarse salt.
  3. On top of this paste, we add the paprika and pepper and continue making our paste, which will turn a reddish color.
  4. Next, add the vinegar and slowly add it, stirring constantly, to emulsify and fuse the ingredients.
  5. Then we add the mixture to the rabbit and stir it well so that the meat is coated.
  6. We add a glass of wine and a bay leaf along with the rosemary and thyme and let it rest for at least 4 hours.
  7. In a large frying pan, add oil and fry the rabbit pieces.
  8. When we finish frying it, we put it in the cauldron with the sauce and the leftover mash.
  9. We add the sauce to the pot to give it a final boil and let it rest.
