- We make our mash by crushing all the ingredients we have listed in a mortar or grinder.
- In a pot, add the chopped potatoes, olive oil, chorizo and salt.
- We add water until it covers a little more than twice the amount of potatoes we have.
- We bring it to a boil and add the noodles and chickpeas.
- We add our mixture and adjust the salt.
- We let it boil for 45 minutes over medium-high heat, until we begin to see how our water begins to reduce and thicken.
- We taste the potatoes and chickpeas and when they are ready, we lower the heat to medium-low and let it rest.
- We turn off the heat and let it rest for an hour.
We recommend serving this dish with a good Canarian cheese.
