Canarian Rancho

What is the Canarian Rancho?

Rancho Canario is one of the most popular stews in homes throughout the Archipelago. It is a centuries-old recipe that combines noodles and legumes, providing a unique flavour that represents the typical leftover cooking of the islands.
Preparation Time

2-4 hours, including the stew’s rest

Ingredients for 4 people

To make the mash we will need

  • A little cumin seed
  • A handful of parsley
  • 2 cloves garlic
  • 1 clove
  • A little freshly ground pepper
  • 4 strands of saffron or coloring if necessary
  • Half a small spoon of thyme

And for our broth

  • 50 gr extra virgin olive oil
  • 270 gr approx of potatoes, peeled and cut into medium pieces
  • A good chorizo
  • 250 gr cooked and drained chickpeas
  • 1 small spoon of salt
  • Water until almost covering the cauldron
  • 250 gr of noodles

How to prepare Canarian Rancho

  1. We make our mash by crushing all the ingredients we have listed in a mortar or grinder.
  2. In a pot, add the chopped potatoes, olive oil, chorizo and salt.
  3. We add water until it covers a little more than twice the amount of potatoes we have.
  4. We bring it to a boil and add the noodles and chickpeas.
  5. We add our mixture and adjust the salt.
  6. We let it boil for 45 minutes over medium-high heat, until we begin to see how our water begins to reduce and thicken.
  7. We taste the potatoes and chickpeas and when they are ready, we lower the heat to medium-low and let it rest.
  8. We turn off the heat and let it rest for an hour.

We recommend serving this dish with a good Canarian cheese.
