What are Canarian-style "papas rellenas"?

The recipe for Stuffed Potatoes, despite being laborious to prepare, has become a very common dish in the kitchens of the Archipelago. An excellent traditional Canarian recipe created thanks to the direct influence of South America on the culinary culture of the islands. Initial preparation

  • We cut the onion and garlic into small pieces.
  • Add a good splash of oil to a frying pan and over medium heat add the onion and garlic to begin frying.
  • When the onion is almost translucent, add a pinch of grated nutmeg and a splash of white wine and let it reduce.

How to make tomato sauce

  • We peel, seed and cut the tomatoes.
  • We cut the onion into cubes.
  • We take a saucepan , add oil and over medium heat, we will add the onion to poach it.

Filling the potatoes and conclusion

  • While our stock is resting, we carefully peel and empty the potatoes. This procedure has many ways to be done, from Volcanic At Xperience we prefer that you fill the potatoes as you find most comfortable.
  • Once they are peeled, we fill them and coat them in egg and flour.
  • In a frying pan, we are going to heat some oil and get a delicious crust by frying the battered potato.
  • Once this process is finished, we put the stuffed potatoes into a pot along with the fried tomato. It is very important that there is a good amount of sauce, since this is usually used to dip the bread.
  • We let the potato rest with the open part facing up, so that the filling does not come out and we let the heat and flavors take effect.
  • When the potato is cooked, it is time to turn off the heat and let it rest for about 3 hours.
