Carajacas

What are carajacas?

Carajaca is a typical dish of Canarian cuisine. It consists of grilled or fried beef liver fillets, served with a green mojo sauce and accompanied by wrinkled potatoes.

Ingredients

  • 1 kg of pork or cow liver
  • ½ Hot pepper
  • 6 cloves of garlic
  • ½ glass of oil
  • ½ glass of vinegar
  • Paprika
  • Oregano
  • Parsley
  • Salt
  • 4 eggs

How to prepare Carajacas

  1. And the cloves in a mortar or grinder. Garlic, vinegar and paprika until you get a paste.
  2. We add the oil and mix everything.
  3. We add the mixture to the liver fillets and let them marinate for about 10 minutes.
  4. In a non-stick frying pan with a little oil, fry the fillets quickly on both sides.
  5. We accompany it with wrinkled potatoes and the mash that has been cooked in the pan with the liver.
