What are carnival tortillas?

This is a recipe that many Canarians have been waiting for. Carnival Tortillas, which as their name suggests are made when the most colourful festival of the year arrives, Carnival, are a very easy sweet to prepare. Ideal to enjoy at any time of the day, but especially to enjoy in company.

Ingredients

  • 4 eggs
  • 400g of flour
  • 15 heaping tablespoons of sugar
  • 250 ml of milk
  • 1 tablespoon of anise
  • 1 teaspoon of cinnamon powder
  • Lemon zest
  • Anise powder
  • Sunflower oil

How to prepare Carnival Tortillas

  1. In a bowl, beat the eggs, sugar, lemon zest, ground cinnamon, anise crushed in a mortar, glass of anise and flour.
  2. Beat well and add the milk.
  3. We achieve a thick dough and let it rest.
  4. We heat a frying pan with plenty of oil and we start to introduce and shape the portions of dough, to give them the typical appearance.
  5. Once we see the golden edges, we turn the pancake over.
  6. We put it on absorbent paper.
  7. We decorate with honey or sugar, while they are still hot.
